Apple Cider Donut Muffins

Hey there! The ladies of the Sweet Moda Blog Project and I are back! We took a little October break which worked out pretty well because I've been busy, busy working on the investment property (head to this post right here to read about the beginning of that adventure!)

In preparation for Thanksgiving I'm sharing one of my all time favorite recipes, Apple Cider Donut Muffins!




Growing up in upstate New York means that apple cider is a fall staple, and so are apple cider donuts! This muffin recipe is super easy to make and is great for Thanksgiving morning!


There's a possibility I forgot a couple things in the ingredient picture, but I'll put the full recipe at the bottom of the post! I also realized I didn't have any nutmeg, but I did have Young Living's nutmeg vitality oil on hand so I used a drop of that in place of the normal nutmeg called for in the recipe (vitality oils are FDA approved for consumption)



I have a bad habit of overfilling my muffin tins, this recipe should yield 12 muffins and I end up with 11 most of the time. My personal preference is also just to use the cinnamon sugar topping on just the muffin tops, though I've seen it done where you roll the entire muffin in the cinnamon/sugar. I find that to be just a little too sweet for my tastes!



Ingredients:
1 1/2 cups all purpose flour
1/2 cup granulated sugar
1/2 cup light brown sugar
1/2 teaspoon baking soda
1 teaspoon baking powder
3/4 teaspoon cinnamon
1/4 teaspoon salt
1/4 teaspoon nutmeg (I substituted one drop of the nutmeg oil here)
3/4 cup apple cider
1 large egg
1/2 teaspoon vanilla extract

Topping:
4 tablespoons unsalted melted butter
1/2 cup granulated sugar
1 1/2 tablespoons cinnamon

Instructions:
1. Preheat oven to 350 degrees F. Grease a muffin tin
2. Mix together the apple cider, egg and vanilla extract
3. Mix together all the dry ingredients. Using a stand or hand mixer on low, slowly add the wet ingredients to the dry and mix until fully incorporated
4. Fill muffin tin and bake for 15-18 minutes (I use a toothpick to test mine, normally mine are done closer to 18 minutes) While they're baking, melt the butter in one bowl and mix the cinnamon sugar topping. The measurements are definitely flexible, adjust how much cinnamon you use based on your preference
5. Immediately turn them out of the muffin tin. Dip the muffin tops in the melted butter and let the excess drip off, then roll them in the cinnamon sugar topping. Set on a wire rack to cool (or sample one with a cup of apple cider to wash it down!)

  1. Yum! I can't wait to make these apple cider donut muffins - these look delicious! There is an apple orchard we always visit at Thanksgiving in my husband's hometown in Illinois that has apple cider donuts. I can eat like a dozen of them! ;)
