Mozzarella Stuffed Meatball Subs

 I'm taking a classic meatball sub and giving it a little twist! My friends and I are blog hopping and this month's theme is comfort food. I'm firm a believer that bread is a comfort food (especially since I got my bread machine and started making my own) and this sandwich is delicious (and super filling)

Here's what you'll need:

  • clove of garlic
  • 1 tbsp Italian seasoning
  • 2 oz tomato paste
  • Mozzarella stuffed meatballs
  • sub rolls
  • mozzarella cheese
  • 2 tbsp butter
  • sugar, salt & pepper
1. I buy meatballs prepared by Publix to save time on a weeknight, but you could absolutely make your own instead! Bake meatballs according to the package (or recipe) instructions


2. While the meatballs cook, peel and mince the garlic. Heat a drizzle of olive oil in a pan over medium-high heat. Add half the garlic and stir until fragrant. I'm pretty heavy handed with my garlic, for the record (this is more like 2 cloves of garlic instead of 1)


3. Stir in tomato paste, Italian seasoning and cook until combined. Then add 1/2 tsp sugar, salt, pepper and 1/4 cup water. Cook until slightly thickened


4. As soon as the meatballs finish cooking, preheat oven to 450. In a microwave safe bowl, combine 2 tbsp butter and remaining garlic, and season with salt and pepper. Microwave until the butter is just softened (my microwave takes about 10 seconds). Slice the sub rolls and spread the garlic butter on either side, then put them sliced side up on a baking sheet and toast in the oven for 2-3 minutes (until they're lightly browned)

Once the buns are toasted, assemble the sandwiches and you're ready to eat! You could definitely have a salad as a side, but my husband and I both agree that these are really filling and we weren't hungry enough to include a salad with it

  2. I love garlic too! Two cloves sounds just about right to me. These sandwiches look so good and that sauce looks so easy to make. I will give it a try for sure. Thanks for hopping with me XO- Jackie
